See how long a vendor has specialized in eco events. I have seen AMAZING green washing.
Make sure the paper is 100% post consumer recycled paper. Reycled paper means that the paper was taken from the mill floor and added back into the vat. You want to get 100% post consumer recycled content.
Tree free paper is even better -- cotton, hemp, lokta, mango, bagasse, lots of options.

Also - -desktop printing is pretty eco. Otherwise, ask for vegetable based inks with your printer.
